A few Cava producers have choosen to drop out of the Cava DO and Colet are one of them. They feel the DO is devaluing the region. That said we are seeing more recognition for the quality Cava's and hope this renasonce continues. Anyway this is made from Xarel.lo, Parellada and Macabeo and aged for 24 months on its lees.
