This wine would have aged originally to become a Manzanilla using the traditional solera system. Certain casks show a deeper, nuttier character, and are transferred to a separate solera to age oxidatively. This wine then spends many years of ageing in cask, usually 30 years or more. The resultant style is dry and very complex. Golden amber in colour, a complex aroma of hazelnuts, honey, oak and spice. The palate brings vanilla, caramelised nuts and hints of leather and truffle. The finish is long, nutty and persistent. Enjoy with pre-dinner nibbles, patê or hard cheeses.
