The base of this Vermouth is Riesling from the Ürziger Würzgarten vineyard, known for its rich mouthfeel, zesty acidity, and long, spicy finish. This Riesling is crafted in the Kabinett style, the lightest and most delicate expression of German Riesling, made from grapes harvested early in the season. The vineyard itself inspired the selection of botanicals, which are grown in the shadows of the vines. Each botanical is harvested at its peak and then carefully extracted or dried to preserve its unique flavors.
This Vermouth is the result of a collaboration between Ernst Loosen (winemaker), Philippe C./Grandbois (bartender), and Tanja Grandbois (chef). Sharing a commitment to natural extraction and low-alcohol beverages, the team began experimenting with locally grown botanicals and the natural sweetness of the wine. They ultimately selected 11 botanicals, which were extracted in spirit and blended with sweet Riesling Kabinett. The blend is aged in a 1,000-liter oak Fuder cask, and no additional sugar is added.
