Winemaker Christophe has been farming biodynamically since 1999 and believes in minimal intervention thus allowing the soil to express the minerality of each terroir. His wife Yuka, a talented Japanese chef also runs the Domaine with Christophe. Gyotaku is a blend of Pinot Bianco, Pinot Gris Gewurtzraminer, Muscat and Riesling. The wine is aromatic, at the same time spicy, floral and buttery on the nose, fresh on the palate, with a very, very slight roundness, just enough to cope with the sauces and spices and goes particularly well with sushi and sashimi.
