A Gamay/Pinot Noir blend that undertakes an interesting aging process in homage to Pierre Desprat's grandfather who would bury his wine in the high beech forests of the region.
After ageing for a year in oak, the bottled wine is transported to small stone mountain pasture huts called burons high on the plateau of the Cantal where it is left to spend the winter. The wine is then recovered the following spring, during which time maturation has taken place.
The nose is fragrant and delightful with aromas of cherries, red forest fruits, spices and woodland. The palate is surprisingly rich with more red fruit and sweet spice. Dusty tannins and fresh acidity lead to a rounded rustic finish.
Drink this with the local Tomme d'Auvergne cheese and chunks of crusty French baguette
