In 2017, Alice and Antoine's Domaine "Grange Saint-Sauveur" was created, named after the barn attached to the Saint-Sauveur chapel. They have a total of 6.5 hectares of various grape varieties, including some vines that are 80-100 years old and others planted in the 1980's. These vines are goblet trained and located along the Loire River, which provides natural protection against frost.
The "lowly" certification of Vin de France is often carried by wines from the new wave of up-and-coming Domaines, ripping up the rule book in defiance of local wine laws.
This VDF Rouge is a blend of Grolleau Noir and Cabernet Franc. Grapes are fermented with native yeast. Aged for a total of 30 months, including 18 months in demi-muids and 12 months unfined and unfiltered in the bottle.
The wine is light and aromatic and a bit on the 'wild' side but with a wonderful texture, elegance and purity. We think it tastes best when allowed to breathe for a while before drinking.
