Vieilles Vignes so these are 55 year old vines and makes a pretty classic Chassagne in style, so lots of peach almonds and ripe apples with a floral eliment and a super long finish.
Chassagne Montrachet Blanc food pairing - Scallops always on the list and lobster, but any meaty firm fish or indeed white meats.
A note on the serving temprature - rich complex whites like these should not be served too cold because this strips away the depth and flavours (you are paying for). So serve this at 10 to 12 degrees to really get the most from the wine.
