Eric is passionate about his wines, the region and life. We first met him 15 years ago and were impressed by his passion and drive. The 'Crays' vineyard is situated on the south-facing slope of the Roche de Vergisson. The soil is composed of limestone scree, with a solid limestone core close to the surface. In the 2018 vintage, winemaker Eric Forest selected grapes from the oldest vines in the plot and allowed them to hang on the vine for an additional three weeks. This slight drying of the grapes resulted in a concentration of flavours and sugars. The grapes where hand harvested and whole bunch pressed. The wine was fermented in French oak and then aged in barrel for one year followed by an additional year in terracotta amphorae.
The wine displays aromas of buttery citrus, orange zest, fresh baked bread, blossom, and beeswax. On the palate, it is full-bodied, robust, and textured, while maintaining an impressive vibrancy. Alcohol is well integrated but at 15% abv this is a big Pouilly Fuisse!
