This style is a relatively new arrival in the history of sherry production having only been introduced in the 1970’s. Fernando de Castilla's Classic Cream is essentially an Olorosso sweetened with a touch of Pedro Ximinez ( 80/20 ratio).
This blend is well-rounded, rich and complex. Aromas of dried fruits and nuts, followed on the palate by tangy acidity balanced by a soft sweetness.
