Fernando Castilla sherries are some of the finest produced in Jerez. Their premium Antique range are intensely pure and complex single solera Sherries that are unblended and untreated (they do not fine, clarify or aggressively filter any of their wines).
After fortification ageing takes place in a Pedro Ximenez solera system. After spending around 20-30 years, in barrels the final sugar content of the Antique PX is around 450 g per litre and the colour has developed over a period from a dark mahogany into an intense black.
Luscious and rich with aromas and flavours of coffee, liquorice, sweet tobacco, prunes, figs, and raisins but with a surprising freshness and delicacy.
