Wade Metzer's winemaking philosophy centres on his unwavering respect for the fruit. He adheres to non-interventionist principles, employing no mechanical interventions, utilizing indigenous yeasts, and avoiding fining or filtration. Sourcing grapes from various Old Vine Certified blocks in Stellenbosch, Wade has earned a reputation for crafting some of South Africa's finest wines.
Sourced from a single-vineyard planted in 1957 on the Helderberg foothills, this wine undergoes meticulous crafting. The grapes are both destemmed and whole bunch pressed; fermentation with natural yeast begins with daily punchdowns. The wine ages for 9 months in seasoned barrels, then is bottled unfined and unfiltered.
Delicate flavours of ripe cherries, cranberries, peppery spice, and a hint of lavender characterize the wine. Despite its delicacy, the palate is firm and concentrated with fine dry tannins, making it exceptionally versatile with shellfish, white meats, and aged cheeses.
