For some guidance if you are having turkey or other white meats go for a Pinot Noir (new or old world) or even a medium bodied Rioja; a rib or joint of beef would lend itself to fuller bodied wine like a Bordeaux or a Syrah/Shiraz. If you are having smoked salmon as a starter then a white burgundy will go well with it.
For an aperitif try a Champagne or an English sparkling wine. If you like sherry then go for an Amontillado or Fino.
Christmas is a great time of year to treat yourself to some sweet wines, a classic Sauternes will go beautifully with pate or try a port with strong cheese. Speaking of cheese one of the best pairings is Gewürztraminer & Munster, it’s a classic combo and for a reason! Nothing can beat the heady wine with the equally heady cheese and some bread.
