Fernando Castilla sherries are some of the finest produced in Jerez.
Their Amontillado began its life as a Fino, aging for 3 years under 15% flor yeasts before being re-fortified to 17% abv and incorporated into an Amontillado Solera without flor, allowing it to be exposed to air. It then matures for around 5 years in this solera.
It is a wonderfully intricate blend of raisin, nutty, and tangy notes. Complex and multi layered with luscious, full-bodied flavours.
