Vin Jaune is unquestionably the speciality that Jura is famous for. Its made from 100% Savagnin and aged Sous Voile (under the flor yeast) for a minimum of six years (and three months). A new vintage is released at the Percee Du Vin Jaune which is usually late January every year. The wine is also bottled in an odd size 62cl this is believed to represent what is left in the barrel after 6 years of aging. (62% will be left). The wine is dry with a real nutty edge.
